The main difference lies in the supply chain of raw materials which, at Pelo nell'Uovo, come from neighbouring farms.
An Agrirestaurant has the obligation to use farm products supplemented by certified Tuscan products and in any case by products originating in Tuscany in harmony with the principle of the short supply chain and the practice of small crops and small farms for serving meals.
